Bananas are rich in potassium, magnesium as well as calcium, hence, they are a good staple in every pantry. It is always included in my shopping list every week and I always make sure to buy enough supply for the week.
When I buy bananas however, I always find it a challenging task because we’re only two in our household and I want to buy bananas that ripen by batch and enough to get us through the whole week without wasting any piece. The unfavorable happened when there was six pieces of bananas that have progressively ripened. I didn’t want to trash them. Paying premium to buy organic only to end up in the bin is a big no-no to me.
In spite of my no-baking rule that I imposed on myself for almost a year already, I had to break it. I baked banana bread. I’m rusty.The last time I baked was last February for my husband’s tiny surprise birthday cake. I’m glad to find out though, that I can still whip up a great tasting banana bread.
