I stopped baking for almost three months except for that one time last month when I made two cheesecakes for the people at my husband’s workplace. It was deemed necessary because I needed to keep a promise. It totally slipped my mind to snap a picture of those cheesecakes, though. I realized it later on but they were already gone.
I gave in. I have been baking this past two consecutive Fridays. I know that going back to baking for our consumption is totally against my objective of getting a bit more healthy. It does contradict the whole objective of getting gourmet food delivery for almost two months now, where some dietary restrictions are being followed. I have been slacking off on going to the gym too and those treadmills must miss me (just kidding) although, I don’t feel too bad as I have been doing my indoor walking regimen with Leslie Sansone, weights ( I can now do 5 lbs. and I can’t be happier) and Frank Sepe’s Fitness Disc.
This was my Friday cake.
This is an angel food cake iced with heavy cream, garnished with semi sweet chocolate and almond. There’s a little surprise inside as I also folded in some semi sweet chocolate morsels. It’s not as light as the traditional angel food but I wanted to add a twist to it. It was great (at least, as far as my husband is concerned).
