I was piping icing and working around decorating this cake as late as 8:00 p.m. Friday night. The perennial late riser that I am, I woke up past midday and of course, baking, was my only task for the day, so no matter how late it was I had to bake as planned. With me under time pressure, even if I so wanted to have this cake look a little better, my hands were not that stable. Add to that the fact that when I baked the cake I was apprehensive that it won’t rise at all. It did! I’m not that satisfied, though, with the consistency, as my previous cakes were better, but it’s good enough.
