On my recent trip to the health food store, I grabbed a container of orzo. My husband loves orzo and he always tells me about those roasted orzo that he gets for lunch from their cafeteria at work. He has not tried wheat orzo and this is the first time that he has ever tried one.
Thus, off I went hunting for a good recipe. I opted not to roast it, as I wanted a totally different recipe from what he gets from work. This cheesy orzo is so delicious, it is prepared just the same way that a regular orzo is prepared except for the additional ingredients such as grated parmigiano reggiano cheese, chopped onions, olive oil, garlic, chicken stock and dried parsley.
I will definitely make this dish again. The next time, I will probably experiment by adding fresh herbs in place of dried.
